Delicious Butter Cake Recipe

 

Just as the tongue twister suggested, a good butter would indeed yield a better cake, especially in the case of a butter cake. A good butter cake is actually more finicky to bake than a chocolate cake. You need to get the right texture for the cake and it should also be rich. If you have a good butter cake recipe in your repertoire, you’ll never be short of options for serving up a delicious sweet treat. This delicious butter cake recipe is so versatile that you can create a whole lot of other cakes from this recipe alone.

 

  • Orange cake: 1 tbsp grated orange plus 2 tbsp of orange concentrate.
  • Butter Fruit cake: Add about 1 cup of mixed dried fruits to the cake batter. At times, I would just use dried apricots and they are delicious!
  • Lemon Poppyseed Cake: 3 tbsp lemon juice + 1 tbsp lemon zest + 1 tbsp poppy seeds.
  • Chocolate Chips Cake: Add ½ cup of chocolate chips.
  • Chocolate and Vanilla Marble Cake: Divide the cake batter into 2. In 1 part of the cake batter, add 3 tbsp of cocoa powder. Place alternate batches of the batter in the baking pan.
  • Coffee Walnut Cake: Add 1 tsp coffee oil or a couple tablespoons of your favorite black coffee into the batter and top with chopped walnuts.
  • Semolina Cake – Substitute 70g of the self-raising flour with 70g of semolina and add 1/4 cups of chopped almonds.

What about some rosewater and chopped pistachios? Did you realize we just gave this cake a morocccon twist? I can go on and on as to how you can spice up this butter cake. The only limitation is your imagination. Oh, butter cakes make an excellent base for trifles too if you didn’t know it already. However I am pretty sure you know about it. You-know- it -all, readers of mine.

Anyways, a butter cake recipe would usually call for the butter to be creamed together with the sugar. There is a slight difference in this recipe and I believe that’s why the cake is ultra-soft and moist. The eggs are whisked with the sugar wherelse the butter is cream with the flour. Yes, might sound a bit odd to some of you but believe me, at times being different can be a beauty and this cake is incredibly beautiful!

If you are new to baking cakes, I have included a few pointers specially for you. ♥

  1. Ingredients should be at room temperature.
  2. Sift the dry ingredients, ie flour.
  3. Whisk the eggs and sugar till you get it to very pale yellow that is almost white.
  4. Do not use dark or non-stick cake pans as it tends to cook the cake too fast and causing it to brown too much
  5. If you find the top of your cake browning too quickly, tent the top of the cake loosely with a large piece of aluminium foil.

You have to give this recipe a try. I always get guests raving about it. Remember, the higher the butterfat content (above 82% is good), the richer your cake would be. Bake this cake for a special event, an occasion where you don’t have to count calories. 😉

Ingredients
  • 230g butter, softened
  • 200g caster sugar
  • 200g self-raising flour
  • 5 eggs
  • 2 tbsp condensed milk
  • 2 teaspoons vanilla essence
Instructions
  1. Preheat oven to 170°C.
  2. Grease and line a 9 inch round pan or an 8x8 square baking pan with baking paper.
  3. Using an electric mixer again, cream butter, condensed milk and flour till white and fluffy.
  4. In another bowl, using an electric mixer, whisk sugar and eggs till pale yellow and creamy.
  5. Slowly fold in the egg mixture to the butter+flour batter.
  6. Add in vanilla.
  7. Pour cake into prepared pan and bake for about 50 - 60 minutes or until a skewer inserted into the center comes out clean.
  8. Once done, let it stand in pan for 10-15 minutes and then turn out onto a wire rack to cool.
